Ingredients

  • 2 cups Muffin Mix
  • 1 teaspoon Baking Powder
  • 1/2 cup Cane Sugar
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1/3 cup Butter
  • 3/4 cup Milk
  • 1 teaspoon Cinnamon

Crumble Topping

  • 2 tablespoons Butter or Shortening
  • 1/4 cup Brown Sugar
  • 1/4 cup Flour
  • 1 teaspoon Cinnamon

Instructions

  1. In a bowl, beat the eggs until light and fluffy.
  2. Add the milk and then the dry ingredients and combine well.
  3. Mix in the melted butter and stir the batter until everything is completely smooth and no lumps of dry ingredients remain.
  4. For the crumb topping, in a small bowl, mix together the brown sugar, cinnamon, flour, and melted shortening or butter. Combine until crumbly.
  5. Drop the muffin batter into a lined muffin tin with a muffin scoop. (Alternatively, you could grease the muffin tin with cooking spray.) Place the crumbles on top of the muffins.
  6. Bake the muffins at 375 degrees F for 20-25 minutes or until a toothpick comes out clean.
