Ingredients

  • 1 cup Crushed Pineapple Juice Included
  • 2 Bananas Large
  • 2 cups All Purpose Flour Can be gluten free flour
  • 1/4 cup Butter or Shortening melted
  • 1/4 cup Mild Vegetable Oil
  • 2 Eggs Large
  • 3/4 cup Brown Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1 1/2 teaspoons Vanilla Extract

Instructions

  1. In a large bowl, combine the flour, baking soda, baking powder, and the spices. Set aside.

  2. In another bowl, combine the mashed banana and crushed pineapple and it's juice. Add in the eggs, vanilla, oil, and butter or shortening. Combine well.

  3. Combine the 2 bowls together and stir until no dry lumps remain. Place the batter in a greased loaf pan.

  4. Bake the loaf at 350 degrees F for 60 minutes or until a toothpick comes out clean. Gluten free bread may take longer.
