Chicken Enchiladas Recipe


  • 1 onion chopped
  • 1 clove of garlic
  • 1 lb. shredded chicken I used leftovers from a whole chicken that I cooked in the crockpot
  • 1 c. salsa divided
  • 8 oz. cream cheese cubed
  • 1 c. shredded cheese
  • 8 small/medium flour tortillas can you corn tortillas also


  1. Heat oven to 350F. Fry the onion and garlic together for about 2 minutes. Add chicken, 1/4 c. salsa, and cream cheese. Cook until heated through and then add 1/2 c. cheese.

  2. Divide mixture into flour tortillas. Roll up and place into a greased 9x13. Top with remaining salsa and cheese. Bake for 15-20 minutes or until cheese is slightly brown on top.
