Peach Cobbler Muffins


  • 1/2 cup butter melted
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 teaspoon baking powder
  • 1 cup chopped peaches fresh, frozen, or canned
  • brown sugar for topping
  • flour for topping
  • butter for topping


  1. Mix together all the ingredients except the peaches.
  2. Mix in the peaches last, you don't want to smush them all!
  3. Drop the dough into a greased muffin pan or a muffin pan lined with liners.
  4. In a separate bowl mix together about 1/4 c. brown sugar, 1 T melted butter, and 2 T flour.
  5. Sprinkle the brown sugar mixture on top of the muffin dough. Bake at 350F for about 30 minutes or until a toothpick comes out clean.
