Ingredients

  • 3 eggs
  • 1/3 cup vegetable oil
  • 2/3 cup applesauce
  • 3 teaspoons vanilla
  • 2/3 cup granulated sugar
  • 2/3 cup brown sugar
  • 2 cups shredded zucchini
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon nutmeg
  • 2 cups blueberries

Instructions

  1. Preheat oven to 350 degrees. Grease 2 9x4 loaf pans.
  2. In a large bowl, sift together flours, salt, baking powder, baking soda, cinnamon, and nutmeg.
  3. In a separate bowl, beat sugar, oil, applesauce, and vanilla until smooth. Add eggs one at a time, beating well in between each egg.
  4. Fold zucchini into sugar mixture.
  5. Add in dry ingredients and mix gently.
  6. Fold in blueberries.
  7. Pour evenly into pans.
  8. Bake for 50-60 minutes. Allow to cool before cutting.
