Homemade Vegetable Soup

Cook Time 8 hours


  • corn from one ear
  • 2 handfuls of chopped green beans freshly picked, frozen if you don't have fresh
  • cabbage slice & dice two or three leaves
  • 1 handful of chopped carrots
  • 1/2 cup cucumber or zucchini or squash - or all of the above
  • 1 cup diced tomato the fresher the better!
  • 2 cups of vegetable broth or try making & using your own chicken broth
  • 1 bay leaf
  • salt & pepper to taste
  • dash in some oregano basil, or whatever seasonings you wish
  • add a bit of corn starch if you want a thicker soup


  1. Add all ingredients to the slow cooker.
  2. Cook on high for 6 to 8 hours.
  3. Serve warm.
