Chocolate Cheesecake Brownie Cupcakes Recipe

Ingredients

  • 2 eggs
  • 4 oz cream cheese
  • 3/4 cup sugar
  • 1/3 cup oil any
  • pinch of salt
  • 1/2 teaspoon baking powder
  • 1/2 cup cocoa powder unsweetened
  • 1/2 cup wheat or white wheat flour
  • 1 cup chocolate chips

Instructions

  1. Soften the cream cheese and add in the eggs, sugar, and oil.
  2. Mix in the rest of the ingredients.
  3. And add in the chocolate chips last.
  4. Drop into a muffin or cupcake tin. Make sure to grease if you don't use cupcake liners. Bake at 350F for about 15 minutes. Try not to over-bake or they will be too dry.
  5. You can frost them or leave them plain. I made a simple whipped ganache frosting for these. (Heat heavy cream, remove from heat, add chocolate chips and a little vanilla, cool overnight then whip.)
