Meatballs with Pepper and Pineapple

Ingredients

  • 2 lb ground beef
  • 1/2 to 3/4 whole onion diced finely
  • 2 eggs
  • 3/4 c. bread crumbs
  • 1 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 1/2 - 2 green peppers diced roughly
  • 1 1/2 c. pineapple chunks
  • 2 c. beef broth
  • 2 T. soy sauce
  • 1/2 c. white wine
  • 1/3 c. honey
  • 1 T. cornstarch

Instructions

  1. Combine ground beef, onion, eggs, bread crumbs, salt, and pepper in a bowl. Roll into small balls. Place in the freezer until firm.
  2. Mix broth, soy sauce, wine, honey, and cornstarch and set aside.
  3. Once firm, roll meatballs in flour and fry in oil in a frying pan until nicely browned. Remove the meatballs to a paper-towel-lined plate.
  4. Pour off oil, and return the frying pan to heat. Add green peppers and cook for 1-2 minutes. Add pineapple, and cook for another 2 minutes. Add broth mixture and meatballs. Allow to cook until sauce is thickened and meatballs are cooked through.
  5. Serve over rice.
