Turkey and Feta Quesadillas

How to use up your Thanksgiving leftovers!

Ingredients

  • 1/2 cup Cooked Turkey or Chicken meat
  • 1 large Tomato diced
  • 2 Flour Tortillas
  • sprinkle Feta Cheese
  • sprinkle Mozzarella Cheese

Instructions

  1. To make the quesadillas simply put the tortilla in a frying pan, add all the ingredients on top and fry until the cheese is melted.
  2. You can warm up the turkey first to make sure that it will be warmed through.
  3. We like to serve these with sour cream for the topping and we have a fresh salad on the side for a complete meal. This is a wonderful way to enjoy turkey because it makes it taste so fresh and not like such a heavy meal!
