In a large saucepan, fry the chopped onion with the butter until the onion is translucent.

Add in the apple juice, chicken broth, and water.

Stir in the potatoes and salt.

Simmer mixture until potatoes are starting to get soft, add in apples, cook until potatoes are fully cooked.

In a small bowl, mix the milk and flour (or starch) and slowly stir into soup. Cook for another few minutes until the mixture thickens.

Add in cheese and stir until cheese is melted.

Serve warm, you can add a little more cheese on top or a little sour cream if you like!
