Apple Cheddar Soup Recipe

Ingredients

  • 1/2 cup chopped onion
  • butter to fry onion in
  • 2 large potatoes
  • 1 cup apple juice
  • 1/2 teaspoon salt
  • 1 large apple chopped
  • 1/2 cup milk
  • 1 cup chicken broth
  • 2 cups water
  • 2 Tablespoons flour or starch
  • 1 cup cheddar cheese shredded

Instructions

  1. In a large saucepan, fry the chopped onion with the butter until the onion is translucent.
  2. Add in the apple juice, chicken broth, and water.
  3. Stir in the potatoes and salt.
  4. Simmer mixture until potatoes are starting to get soft, add in apples, cook until potatoes are fully cooked.
  5. In a small bowl, mix the milk and flour (or starch) and slowly stir into soup. Cook for another few minutes until the mixture thickens.
  6. Add in cheese and stir until cheese is melted.
  7. Serve warm, you can add a little more cheese on top or a little sour cream if you like!

Recipe Notes

This recipe makes enough to serve 4. I didn't make this particular one in the slow cooker but it could be easily adapted to be made that way.
