Coffee Cake Recipe From Scratch

Ingredients

For the Batter:

  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Sugar
  • 1 cup All-Purpose Flour or Wheat Flour or Gluten Free Flour
  • 1 teaspoon Baking Powder
  • 1/2 cup brewed Coffee
  • 1 Tablespoon Butter

For the Topping:

  • 2 Tablespoons of butter
  • 1/4 cup of flour
  • 1/2 cup of brown or raw sugar

Instructions

Start by making your cake batter:

  1. In a bowl, mix together the eggs, vanilla, and sugar until well blended.
  2. Add in the flour of your choice and the baking powder.
  3. Slowly mix in the coffee and butter (it will help if the butter is melted). Stir together until all ingredients are mixed. The consistency will be that of a dessert cake batter.
  4. Pour the batter into a greased 8x8 baking pan. Bake at 350 degrees for 15 minutes.

While the cake is baking, mix up the streusel topping.

  1. In a bowl, mix 2 Tablespoons of butter, 1/4 cup of flour, and 1/2 cup of brown or raw sugar. Stir together with a fork or spoon until crumbly.
  2. Remove the cake from the oven after 15 minutes of baking, sprinkle the streusel on top, and place back in the oven for an additional 10 minutes.
  3. Remove from the oven and let it cool before serving.
