Ingredients

  • 1 cup all-purpose flour or all purpose gluten free flour
  • 1 teaspoons baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups grated peeled carrots
  • 1/4 cup raisins optional

Instructions

  1. In a large bowl, combine the oil, sugar, vanilla, eggs, and carrots. (You can also add in raisins if you want to.) Mix together well.
  2. Add in the remaining ingredients and mix until no lumps of any one ingredient remain.
  3. Pour the batter into a greased 8x8 baking dish or a 9 inch round cake pan.
  4. Bake at 350 degrees for about 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
