Zucchini Summer Garden Fry

I LOVE zucchini and no matter how much my garden decides to produce, it’s never enough for me and I would happily eat it each and every night. I miss it so much in the winter I guess I just have to “catch up” on my zucchini consumption in the summer!

Now I’m not a very big cook in the summer. I don’t like to turn on my oven and I just rarely feel like making a big hearty meal. In the summer you can give me fresh garden greens any day over a pot roast!

This is one of my recipes that isn’t really a recipe. There are no amounts and no measurements and actually no set ingredients. It’s a fun make-it-how-you-like-it type of dish and that’s what I love about it! You can use anything that you have in your garden currently and tailor it to your family specific tastes.

What You Need:

  • Zucchini
  • Onions, Potatoes (or anything else like; peas, green beans, yellow squash, ect)
  • Olive Oil (butter or Coconut Oil will work as well)
  • Sausage (you can use homemade sausage too!)

Zucchini Summer Garden Fry

Start by washing and dicing up all your veggies. If I’m cooking this meal with potatoes I add those in first because they will need to cook longer (and I add in the onion as well), if you are not then you can throw in all your veggies together. Drizzle a little olive oil in the pan to keep them from sticking and fry slowly on a low heat.

Cook the sausage in a separate pan to ensure that it is cooked through. You can use any kind of sausage you have on hand and it will taste great! In this case our “sausage” was some organic and nitrate free beef hot dogs. Of course, Farmer Boy loves it when we make it this way! Once the sausage is cooked and your veggies are almost done, add the sausage in with the veggies and cook it a bit longer. This will give a little bit of a smoky flavor to the veggies.

The other thing I love about this meal is that it’s a one dish dinner! You’ve got your protein and veggies…add a side of fruit cobbler and you are good to go.

  1. Thank you for this! I cook a lot of veggies like this but I never thought of adding potatoes or meat to the mix. I think I will try this but with some chicken since we are not big sausage fans. I love your posts — please keep them coming!

  2. I have also used eggs in a similar dish. Just whip up a couple of eggs and add them at the end for added protein.
