The Best Old Fashioned Cinnamon Muffins

Ingredients

– 2 cups Muffin Mix – 1 teaspoon Baking Powder – 1/2 cup Cane Sugar – 1/2 teaspoon Salt – 2 Eggs – 1/3 cup Butter – 3/4 cup Milk – 1 teaspoon Cinnamon Crumble Topping – 2 tablespoons Butter or Shortening – 1/4 cup Brown Sugar – 1/4 cup Flour – 1 teaspoon Cinnamon

Step 1

In a bowl, beat the eggs until light and fluffy.

Step 2

Add the milk and then the dry ingredients and combine well.

Step 3

Mix in the melted butter and stir the batter until everything is completely smooth and no lumps of dry ingredients remain.

Step 4

For the crumb topping, in a small bowl, mix together the brown sugar, cinnamon, flour, and melted shortening or butter. Combine until crumbly.

Step 5

 Drop the muffin batter into a lined muffin tin with a muffin scoop. (Alternatively, you could grease the muffin tin with cooking spray.) Place the crumbles on top of the muffins.

Step 6

 Bake the muffins at 375 degrees F for 20-25 minutes or until a toothpick comes out clean.
