The Best Easy Cinnamon Muffin Recipe

Our family really loves muffins and enjoys them at least once a week for breakfast or for snacks. A few weeks ago I wanted to make something simple but still tasty to try as a new muffin flavor. I based this recipe off a recipe that I found in a vintage cookbook that I have and it was a big hit!

These muffins are soft and moist but perfectly tasty. They are a great frugal muffin recipe when you want something with flavor but not something with berries or other expensive additions.

Cinnamon Muffins are great on their own but there are also a few additions that you could put in them (like apples or nuts) that give them another flavor and texture. Both plain and the kind with the additions taste great!

Gluten Free Muffin Mix in a Jar

Ingredients in Cinnamon Muffins

  • Muffin Mix. I use my Gluten Free Muffin Mix but you can also use the regular Muffin Mix for this recipe.
  • Eggs. I use my own chicken eggs in this recipe but of course, any will do. You could also replace the eggs in this recipe with applesauce or a vegetable oil, however, the muffins will have a denser texture.
  • Baking Powder. Although there is some baking powder in the muffin mixes, this will help give it a little more lift.
  • Sugar. I used regular can sugar in this recipe although a sugar replacement like monkfruit will probably work.
  • Salt. I use pink salt or sea salt in all of my recipes.
  • Butter. Butter can be replaced for dairy free (more detail below). Full butter will make this recipe nice and rich!
  • Milk. Can also be replaced for dairy free with a dairy alternative.
  • Cinnamon. I buy my cinnamon powder in bulk because we use so much of it!
  • Shortening/Brown Sugar/Flour. This is for the crumble topping. You can leave this off but I wouldn’t recommend it!

Instructions for Making Cinnamon Muffins

In a large bowl, beat the eggs until light and fluffy.

Add the milk and then the dry ingredients and combine well.

Cinnamon Muffins Batter

Mix in the melted butter and stir into the mixture until everything is completely smooth and no lumps of dry ingredients remain.

Crumble Topping for Muffins

For the crumb topping, in a small bowl, mix together the brown sugar, cinnamon,  all purpose flour, and melted shortening or butter. Combine until crumbly.

Muffins in Muffin Tin

Drop the muffin batter into a lined muffin tin with a muffin scoop. (Alternatively, you could grease the muffin tin with cooking spray.) I always use these Paper Liners from Paper Chef because my gluten free muffins never stick to them.

Muffin Batter with Crumble

Place the crumbles on top of the muffins. I have this Muffin Pan from Fox Run that I really love. And I always use a Muffin Scoop to portion out my muffins.

Baked Cinnamon Muffins

Bake the muffins at 375 degrees F in the oven for 20-25 minutes or until a toothpick comes out clean. Cool on a wire rack.

Variations to the Cinnamon Muffin Recipe

Apple Cinnamon Muffins

– Add about 1/2 cup of finely diced apples into the batter.

Cinnamon Raisin Muffins

– Add 1/2 cup of raisins into the batter.

Cinnamon Nut Muffins

– Add 1/2 cup of chopped walnuts, pecans, or another favorite nut into the batter.

How to Store Leftover Cinnamon Muffins

You can store leftover Cinnamon Muffins in an airtight container on the countertop until you are ready to enjoy them.

You can freeze any muffins that won’t be enjoyed within a few days of baking can be placed in a freezer bag or freezer container and be frozen until needed. Thaw them at room temperature on the counter before enjoying again.

Cinnamon Muffins

Dairy Free Cinnamon Muffins

To make this recipe dairy free, replace the butter with a vegan buttery spread or palm shortening. Replace the milk with a milk alternative such as coconut milk. Also use the shortening in the crumble topping instead of butter.

Gluten Free Cinnamon Muffins

Use the Gluten Free Muffin Mix to make this recipe gluten free. Also, be sure to use a gluten free flour in the crumble topping. I just used straight white rice flour in the topping.
