Simple Vegetable Pasta Recipe

Ingredients

  • 1 large Zucchini
  • 8 ounces uncooked Spaghetti Noodles I used gluten free
  • 1 jar Pasta Sauce
  • Other vegetables as desired you can also make pasta with yellow squash, carrots, or similar vegetables

Instructions

  1. Start by creating noodles out of your veggies.
  2. Bring the water for your pasta to a boil and add the pasta. Cook until it is al dente. Drain.
  3. At the same time, cook your veggies for your pasta. I like to do this by placing an inch of water in the bottom of a pan and adding in the vegetable noodles. Place the lid on the saucepan and steam for a few minutes until the noodles are softened but not soggy. With zucchini, I cook them just until they've reached a nice shade of bright green (about 3 minutes). Remove them from the stove and drain.
  4. Heat up your jar of pasta sauce on the stovetop. You can use store-bought if you have some or use home-canned for the best flavor.
  5. Toss your veggies noodles with your regular noodles. Mix the noodle mixture with the pasta sauce. Serve warm and enjoy!

Recipe Notes

You will need some kind of spiralizer or something to make "noodles" out of your vegetables for this recipe. I personally have a large Spiralizer because I can use it with the big zucchini in the summer. I've tried the smaller handheld kind and they didn't work very well for that, although they do work well for smaller produce, like carrots.
