In a medium bowl, combine the zucchini, butter/coconut oil, egg, and honey.
In a large bowl, combine the flour, salt, baking soda, and sugar.
Pour the wet ingredients into the large bowl with the flour mixture, stir to combine. Fold in the chocolate chips and add applesauce until a moist dough forms.
Spread into the pan and bake for 20-25 minutes, or until the top turns golden brown. Remove and let cool, then cut into bars.
Note: The applesauce helps moisten the dough. The amount you use will depend on the weather, the moisture content of your flour and zucchini, and personal preference. I ended up using ½ cup, but sometimes I don’t need it at all.
