  • 1 cup blueberries fresh or frozen
  • 2 cups flour
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 1 cup milk or milk alternative
  • 1/3 cup oil


  1. Mix together the flour, salt, and baking soda.
  2. Add in the sucanat. You can use regular sugar instead if that's what you have.
  3. Add in the milk and oil. Milk at room temp is the best for recipes like this!
  4. Don't overmix. Fold in the blueberries.
  5. Put into a greased muffin pan or a muffin pan lined with cupcake liners. I sprinkled a little turbinado sugar on top before I baked.
  6. Bake at 350F for about 25 minutes or until a toothpick comes out clean. Yum!
