One pot, hearty comfort! This Southwest chicken soup simmered low and slow in the crockpot is packed with zesty flavor from chiles, cumin, corn and beans. Ingredients

  • 4 cups shredded rotisserie chicken or any shredded, cooked chicken
  • 32 oz chicken broth
  • ½ cup half & half
  • 14 oz diced tomatoes
  • 14 oz tomato sauce
  • 14 oz pinto beans drained and rinsed
  • 14 oz corn drained
  • 2, 14 oz green enchilada sauce
  • 1 packet low sodium taco seasoning or 2 tablespoons of homemade seasoning
  • 1 pouch microwave long grain rice or 2 cups cooked rice

Instructions

  1. Add all ingredients except for rice into a crockpot.
  2. Cook on high for 2 hours or low for 4 hours.
  3. In the last 30 minutes, cook the rice in the microwave and add to the crockpot.
  4. Enjoy!
