Strawberry Lemonade Concentrate Recipe

This is an easy to make delicious beverage that you can preserve to enjoy all summer long!

Ingredients

  • 6 cups hulled strawberries
  • 4 cups freshly squeezed lemon juice
  • 2 cups honey or sugar

Instructions

  1. Prepare the boiling water canner. Clean your jars and prepare the lids.
  2. Puree strawberries in a blender until smooth. Transfer to a large saucepan or small stockpot.
  3. Add lemon juice and sugar (or honey) to strawberry puree, stirring to combine. Heat to 190° F over medium-high heat, stirring occasionally. Do not boil. Remove from heat.

  4. Ladle hot concentrate into hot jars, leaving 1/4 inch headspace. Wipe rim. Center lid on jar. Apply the band until the fit is fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  5. Process jars in a boiling water canner for 15 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. The lid should not flex up and down when the center is pressed.
