Cheese Crispies (Gluten Free)

When I went gluten-free over 10 years ago now, I wondered what on earth I was supposed to eat for snacks. I love crackers and cheese. Cheesy goodness, along with crispy crackers. Perfection in my book! Plus I love the little extra protein boost in the afternoon from the cheese.
As an alternative, I came up with these cheese crispies. They are crunchy, they are cheesy, and they are ridiculously easy to make. All you need is a single ingredient, CHEESE!
How to Make Cheese Crispies
Shred up some good cheese. So far, I’ve only tried this with sharp cheddar, but another flavor should work. Experiment and comment on the results!
Use a bar pan or another baking sheet (with sides!) and make little piles of shredded cheese on the pan. Do not grease the pan or use very much cheese in each little pile. I put parchment paper on the pan before I put the cheese on to prevent it from sticking.
Bake in the oven at 350 degrees for about 7 to 8 minutes or until the edges get a little brown and crispy. It’s ok if the middles don’t look “done” because they will crisp up as they cool.
Remove the Crispies from the pan and let them cool. You may want to let it cool on a paper towel to drain off some of the “grease” if that bothers you.
I store these in a bag in the fridge if there is any leftover. It’s hard not to eat them right away and they are best slightly warm. They only last a few days in my house. Enjoy!

I’ve been making these for years, except I cook them on the stove in a frying pan. We call them “cheese chips” and my kids LOVE them!

My friend introduced me to these a few years ago. I love them made with Monterey Jack.
My kids used to put a plate of shredded cheese on top of the floor registers to make these in winter!

My daughter (15) takes string cheese sticks & cuts them n half & microwaves them for about 30 sec; they melt nicely but not too hot. Then uses speg sauce or maranara sauce for dippng. Its way better than fried cheese sticks and just as yummy!!

I have been making these for years with Parmesan and now with the cheddar thanks to you! Yummy could not enjoy anything more. When hot sprinkle with herb bread crumbs yummy and add to a bowl of hot soup. Thank you so much for all that you share with us. Luv luv your sight just luv it. I usually make my own crackers, I put a thin slice of cheese on top and pop them in the Micro for 10-20 sec’s It looks just like these without the cracker! I am now going to try this with our home smoked cheese! Thanks for this! I love Cheese!!
