Hello friends! A few years ago, I really wanted to start meal planning but I had no idea how to do it. All of the blog posts I read about those perfect weekly meal plans (complete with mouthwatering food pictures!) just frustrated me. I tried meal planning but we never seemed to be able to stick to it and I felt stressed out.

Hi,
I am disabled and in a wheelchair due to pain syndromes. I used to cook and bake much more than I can now.
Unfortunately due to my pain it takes me a long time to cook and bake. I do try to buy organic everything as much as I can. My husband also doesn’t cook. Would your meal plan work for people like us?
Breakfast is either organic Kasha cinnamon harvest creak with a few almonds and organic flax and some fresh organic fruit or yogurt with the other items on it.
I eat a fresh arugula salad with avocado, tomatoes with olive oil, fresh lemon and dill weed for my dressing. I also eat cottage cheese or blue tortilla chips with melted cheese on them or organic cheese pizza with my salad for lunch/dinnertime.
I don’t eat three meals. It’s too much for me.
In the evening we have a small bowl of frozen yogurt.
Sometimes if I have the energy I make a asparagus casserole or spinach lasagna. That is rarely.
Please let me know if your book would help me find ways to expand oir diet without using a lot of energy I don’t have.
