This simple, no-bake wonder combines the zesty punch of fresh lemons with the creamy sweetness of condensed milk, all nestled in a crumbly graham cracker crust. Ingredients in Old Fashioned Lemon Icebox Pie
- Pie Crust. I use a graham cracker crust for this recipe, but if you want to, you can also use a regular pie crust like a Butter Crust or a Cream Cheese Crust. You could also make a crust with crushed Vanilla Wafers or other cookie crumbs.
- Eggs. Remember that this recipe calls for uncooked eggs (just like mayo). I would recommend using home-raised, farm-fresh eggs.
- Lemon juice. You can use fresh lemon juice or bottled lemon juice.
- Sweetened Condensed Milk. You need two cans of sweetened condensed milk in this recipe to make the pie.
- Vanilla Extract. I like to use Homemade Vanilla Extract, but you can use either homemade or store-bought.
Step by Step Instructions for Making Old Fashioned Lemon Icebox Pie
Add eggs to a large bowl. A clear bowl lets you see when everything has been mixed well. You can use a regular bowl, of course, if you don’t have a clear one. Room-temperature eggs will work best, so if you have some fresh out of the hen house, use those here!
Add the condensed milk, followed by the vanilla.
Pour in the lemon juice and whisk the ingredients until mixed together. You can use a basic hand whisk or an electric mixer if you find the ingredients aren’t combining well. You could also add in some lemon zest if you want it to have an even stronger lemon flavor.
Pour the mixture into the pie crust. Put the pie in the freezer for 12 hours to set up the lemon filling. Don’t put it in the fridge, it needs to be in the freezer to chill and set up like ice cream.
When ready to eat, let it stand for a few minutes to thaw just slightly to make it easier to cut and serve.

Any leftover Lemon Pie should be stored in the freezer and not in the refrigerator. You can store it in its original pie container or move it to an airtight container to save space.

For a dairy-free version of this pie, use sweetened condensed coconut milk in place of the regular sweetened condensed milk.
