Quick and Simple Cheesecake

In the scheme of trying to make life a little more simple around here, finding the simplest recipes has become a bit of a a habit. I’m trying to come up with things that I’ll be able to whip up really fast for my family once the baby is here, without compromising the ingredients. I don’t want to slack off TOO much on my mommy duties!

I came across this simple cheesecake recipe, and I’m beyond excited to share it with you all. I am floored at how easy this was to throw together, yet it tastes SO good! The ingredient list is minimal and there is no baking involved. Oh yeah, that’s right-NO. BAKING. INVOLVED. I know that has to make you smile. With summer around the corner, the last thing I want is to have my oven on all of the time. It gets hot and humid enough as it is, here in NC. Any recipe that omits that appliance is a winner in my book!

Simple Cheesecake Recipe

Pie Filling –

What You Need:

  • 8 oz. cream cheese
  • 1 can or 14 oz. sweetened condensed milk
  • 1/4 cup lemon juice

Graham Cracker Crust –

What You Need:

  • 10 crushed graham crackers
  • 1/3 cup sugar
  • 6 Tablespoons melted butter
  •  1/2 tsp cinnamon

Directions for crust:

-Mix ingredients together

-Press into a pie pan

-Bake in a preheated oven at 375 degrees for 7 mins.

-Pop in fridge to cool

While your crust in cooling off, start on the cheesecake mixture:

-Mix ingredients together until completely smooth

-Pour into prepared crust

-Place in fridge to set for an hour

– Top with the goodies of your choice (chocolate, fresh fruit, honey, etc)

 

That is it. A cool treat that I promise that you’ll adore! This is one for the recipe box, folks.
