I don’t know about you, but in our home, we love starting our day with some fluffy and yummy pancakes. They are perfect for busy mornings when we need a quick and satisfying breakfast that everyone will love.
The pancake recipe I’m sharing today only needs three simple ingredients that you probably already have in your pantry.
Ingredients in 3 Ingredient Oatmeal Pancakes
This simple oatmeal pancakes recipe only needs 3 ingredients. The toppings are, of course, optional.
- Banana. You need one large banana to make these pancakes. How ripe the banana is will determine the sweetness of the pancakes. Riper = sweeter.
- Old Fashioned Oats. We will be making our own oat flour with whole oats (which is the cheapest way to do it!). You can use pre-made oat flour if you have that. Don’t use quick oats or steel-cut oats, as they won’t have the right texture. You can use gluten-free oats if needed.
- Milk. This recipe needs milk, but you can also use a milk alternative if you need it to be dairy-free or to make the pancakes vegan.
- Toppings. Toppings are always optional (but are they really?), but you’ll want things like maple syrup, more bananas, nuts, or other favorites. You could also add cinnamon or vanilla extract into the batter if you like that for more flavor. If you don’t think the pancakes are fluffy enough, you could add an egg to the pancake batter as well, but then it wouldn’t be 3 ingredients.
Step by Step Instructions for Making 3 Ingredient Oatmeal Pancakes
Using a high-speed blender, blend the rolled oats. Pulse until they form a flour-like consistency.
Combine the almond milk and ripe banana in the blender and blend until the mixture becomes a smooth texture. The batter should have a slightly thick, pourable consistency in a mixing bowl.
Transfer the batter to a mixing bowl and allow it to rest for 10 minutes, allowing the fiber to absorb the liquid.
Heat a pancake griddle over medium-high heat.
Lightly grease the griddle with coconut oil and pour 3 tablespoons of batter per pancake.
Cook for 2-3 minutes on one side until it solidifies and starts to dry out.
Flip the pancake with a spatula to the other side and cook for an additional 1-2 minutes until it is fully cooked and golden brown.
Serve the pancakes with slices of banana, pecans, and a drizzle of maple syrup.
This recipe only makes 4 large pancakes so you will need to double/triple/quadruple it for a large family.
Storing Leftover Pancakes
You can store leftover pancakes in an airtight container in the fridge if you have extras. You can also freeze the pancakes if you want to save some for later. Just put the cooled pancakes in a freezer bag before placing in the freezer.
Re-heat leftover pancakes in the microwave or on a tray in the oven. (Or toaster oven.)
What to Serve with Oatmeal Pancakes
You can top your pancakes with fresh fruit like berries or bananas for a burst of sweetness. If you’re feeling extra indulgent, a drizzle of maple syrup or a dollop of whipped cream will take your pancakes to the next level. And if you want to add some protein to your meal, a side of bacon or sausage would be the perfect complement to these hearty pancakes.
