Samoa Cookie Truffles
Do you ever get the craving for one of those Classic Samoa Cookies from the Girl Scouts when they aren’t in season?
This super easy Samoa Cookie Truffles recipe is the perfect way to fill that craving! These little treats are super easy to make and are perfect for any coconut fan.
These little truffles taste like melted caramel, coconut filling, and chocolate, all blended together in a simple copycat recipe.
Ingredients in Samoa Truffles
- Shredded Coconut. You can use sweetened or unsweetened coconut if you want to save a little sugar. I get mine in bulk here.
- Crushed Nilla Wafer Cookies. You can always make Homemade Vanilla Wafers if you don’t want to buy these.
- Dulce de Leche. Again, something you can make homemade if you don’t want to buy it or can’t find it at your store.
- Sweetened Condensed Milk. I know that you can make this, but I haven’t before. You can use either homemade or store-bought.
- Melting Chocolate. This recipe calls for almond bark if you’d like a little bit cheaper version or you can use chocolate chips or baking chocolate. Really any kind that you have on hand.
Step By Step Instructions for Making Samoa Truffles
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
Spread coconut out on the baking sheet and brown for 10 minutes. The toasted coconut will help to give your truffles a little more flavor.
In a large mixing bowl, add toasted coconut, nilla wafers, dulce de leche, and condensed milk and mix until well incorporated.
Using a cookie scoop, scoop balls of mixture onto parchment paper. Freeze for 30 minutes. This will help the truffles to be easier to handle when you move on to the next step.
Melt chocolate in the microwave in a small, microwave-safe bowl based on the package instructions. As mentioned above, you can use whatever melting chocolate you have. Semi-sweet chocolate is our favorite here. Take the little balls and dip them partway in the melting chocolate. Let any excess chocolate drip off.
Repeat the process with all remaining truffles. Once you’ve finished them all and placed them back on the cookie sheet or wax paper, drizzle melted chocolate across the top of each truffle. Store in an airtight container for 3-5 days.
