What We Did This Week: Just Life!

Welcome back to another edition of my weekly blog! If you are new here, this is just a fun little way that I write down the frugal and off-grid living things we did this week to hopefully give you some ideas and tips, and also just to be able to connect and share!
I mostly stayed off social media this week and didn’t take too many pictures either…sorry about that!

Meals We Ate
We switched up our meals a bit this week and the structure of breakfasts. Now they always have: a protein, a carb, and a fruit. So, for example, one day we had sausage, bagels, and bananas. This morning was eggs, toast, and kiwis. The kids seem to be doing better on a more rounded breakfast before school.
Some meals we had were:
- Shepherd’s Pie
- Herbed Chicken and Veggies Sheet Pan
- Chicken Stir Fry (with my stir fry sauce)
- Chili (home canned)
- Tomato Soup and Grilled Cheese
For those looking for my free meal plans, I put up a Frugal Meal Plan this last week as well as a Food Pantry Meal Plan. I’ll have an “emergency” meal plan up this weekend.

Projects We Worked On
We didn’t do many projects this week due to the cold, snow, and mud. We did have several people over for meals. We are currently discussing our family’s future and a ministry opportunity that was laid on our hearts this week.
I also worked some extra online jobs this week. I’m trying to buy some new games and things for the kids education so I’m saving up. 🙂

Shopping I Did
No purchases this week, but I did work on putting together some Christmas gift ideas for the kids. We are giving family gifts at Thanksgiving, so I need to have everything put together by then!
I am hoping to grab a bag of flour from the Amish this weekend as I’m running low.

Books We Read
- Red Walls and Homesteads: A neighbor gave me this book to read, and I finished it this week. It was an interesting “journal” of a semi-local homesteading family.
- The Green Ember: The kids are re-reading this series in audiobook. They love it!
- Corrie Ten Boom – Keeper of the Angel’s Den: We read this one as a family. It’s very intense in some parts but a very good book.

Blog Posts I Wrote
- Autumn Homeschooling Projects with Homestead Materials – This is a fun list of homeschooling ideas that you can do with what you have on hand!
- Classic Cheeseball Recipe – I updated this recipe…it’s a good one, especially going into the holidays!
- Butterscotch Sauce – Another good recipe, and so easy to make!
- Drying Pumpkin Seeds – This is a good project for this time of year to make a healthy snack.
- Vegetable Soup with Ground Beef and Noodles – A great, simple but yummy supper idea!
