
Chicken and Cheese Queso Recipe
This is one of our favorite family recipes and I’m glad that I’m finally getting around to sharing it with you! Although this recipe is simple (like most of my recipes are!) the results are very tasty and it’s something the whole family can enjoy. Pair with a side of your favorite steamed veggies and you’ve got a full meal.
For the chicken in this recipe, you can really use any chicken that you have. I’ve made this work with leftover chicken I had from cooking a whole chicken but our favorite method is the chicken in the slow cooker. All I do is toss a few chicken breasts in the slow cooker with some water in the morning and turn them on high all day. When supper is ready around 5 pm they are done!

Queso Recipe
What You Need:
- 1 cup Milk
- 3 Tablespoons Cream Cheese
- 2 cups Shredded Cheddar Cheese
- 1 cup Salsa (or make some up quickly by dicing 2 large tomatoes and mixing with a bit of salt, dried onion, and garlic powder)
- 1 teaspoon Salt
In a saucepan on the stovetop, whisk together the milk, cream cheese, and cheddar cheese. Add in the salt and stir together over a low heat until mixture becomes creamy and bubbly. Add in the salsa and cook for a bit longer until the entire mixture is heated through.
Pour the homemade Queso over the top of your chicken and a bit of cooked rice. Enjoy!

This sounds good! I was just telling hubby this morning that I am growing weary of coming up with new ideas for our remaining canned meat. I love having it on hand,but when I start to get “spring fever” I want to eat something different than we’ve had all winter. This will sure help!! We are going to butcher our hog in a couple weeks,so we will be having fresh meat soon! Also,we will be tapping our trees this weekend..it is much later than normal because of the frigid winter.The grandkids are so excited(so is grandma!). Now,let’s hope for dandelion greens to sprout…..
