Gluten Free Zucchini Brownies

Need a treat that you can have on your gluten free diet? These Gluten Free Zucchini Brownies are simple and frugal to make. We love them when we have too much Zucchini to deal with!
Gluten Free Zucchini Brownies
Zucchini Brownies are one of our treats. When I started a Gluten Free diet, it was in the middle of harvest season, and we had zucchini coming out of our ears. Determined to turn my favorite treat into a gluten-free snack, I devised this recipe.
First, you would never know these are gluten-free! And second, you can’t tell these are filled with healthy veggies. (That makes all the sugar a little better…right?!) Plus, the gluten-free version contains whole grains so it’s twice as healthy!
Ingredients in Gluten Free Zucchini Brownies
- Sugar. Yes, you need quite a bit of sugar to make this recipe, they are brownies and a special treat. I have not tried any sugar replacements in this recipe.
- Oil. Use any mild flavored vegetable oil that you like.
- Vanilla. I use homemade Vanilla Extract. You can use store-bought if that’s what you have.
- Zucchini. You can use fresh, frozen, or dried zucchini in this recipe.
- Brown rice flour. This helps to make the recipe slightly healthier than it’s white flour companion.
- Sweet rice flour. This is also known as sticky rice flour. It gives the flour blend here some starch, flavor, and structure. You can also replace all the flour with a 1-1 gluten free flour blend instead if you have trouble keeping these together.
- Baking soda and Salt.
- Cocoa. This should be unsweetened cocoa powder. You are already adding enough sugar!
Instructions for Making Gluten Free Zucchini Brownies
Mix all together well and pour into a 9×13 greased pan.
Bake for 35 minutes at 350F or until a toothpick comes out clean. Once cooled, you can make the frosting, which recipe follows below.
Frosting Ingredients
- Butter, Milk, Sugar, and Chocolate chips. This frosting isn’t required but is so delicious!
Frosting Instructions
On the stovetop, mix together the butter, milk, and sugar. Heat together until the mixture boils. Boil for 1 minute. Remove from heat and stir in the chocolate chips. Pour over the brownies and let it cool before you cut.
This recipe works great with both fresh zucchini and frozen shredded zucchini. Remember that if you are using frozen zucchini, you may need to drain it first; otherwise, your brownies will end up too soupy from the extra water content.
Gluten Free Zucchini Brownies
These simple and frugal gluten free brownies will be the highlight of zucchini season!
Ingredients
Brownies
- 1 1/2 cups sugar
- 1/2 cup oil
- 2 teaspoon vanilla
- 2 cups shredded zucchini
- 1 cup brown rice flour
- 1 cup sweet rice flour or sticky rice flour
- 1 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/3 cup cocoa
Frosting
- 6 Tablespoons butter
- 6 Tablespoons milk
- 1 1/2 cups sugar
- 1/2 cup chocolate chips

Recipe Notes
If you have trouble with the brownies being crumbly, you can replace the flours with an all purpose gluten free flour that contains a binder. I originally made this recipe with single ingredient flours to keep the cost down.
Storing Leftover Gluten Free Zucchini Brownies
These brownies are best if eaten right away. If you have any leftovers, store them in an airtight container on the countertop for a day or two. If the full recipe amount is too much to eat that quickly you might want to make half a batch and bake it in an 8×8 baking dish.

Thanks for these! What is the reason for using sticky rice flour, and can I substitute it with other flours and xanthan gum? I’ve been looking for sugar-free/ gluten-free/ vegan baking recipes!! 🙂
You could try it but yes you’d need to add some xanthan gum. I just like using it because it’s cheap and in my gf flour blend that I make:)

Just make sure to look for Unsweetened Cocoa Powder. You should be able to find it with all the regular baking supplies. 🙂
I made these and they turned out great! They taste just like your picture looks; super fudgy and delicious. I couldn’t find sticky rice flour so I used white rice flour instead with great results. Thanks for the recipe!!

Hmmm, I’m not sure, I haven’t tried anything different for the frosting. You might be able to use coconut oil but it won’t set up quite the same or have quite the same flavor.
We used cane sugar, Namaste Foods “perfect flour blend”, and carob chips….. Just put it in the oven so we will see ……

Hi – I came across this recipe on Pinterest and can’t wait to try it given that we’re experiencing an early bumper crop this year (it’s only late June and we’ve already harvested 15 lbs =:-s of the lovely things). I do have a question though, is it correct that this recipe contains no eggs? I made it to recipe and it’s in the oven as I type. I have my fingers crossed that no egg was correct 🙂

I’ve made these a few times and are my go-to recipe when brownies are in need… I found tonight that mixing the batter in the food processor was significantly better than mixing by hand… I will continue to do this from now on and recommend this to others… Thanks for the great and SIMPLE recipe!

I saw this recipe on an allergy Facebook page and I was hesitant to try because I have already tried so many gluten-free egg free brownie recipes that I was just about to give up.
These brownies are absolutely delicious. My two-year-old allergy Baby was thrilled beyond words. And I’m thrilled that I could no longer have to buy package brownie treats filled with preservatives for her. Now birthdays and school events will be so much more fun with these packed for my baby girl! And to be completely honest… I ate three and that they were better than traditional brownies!
