This is a new post and let me know what you think. Each week I thought it would be neat to do one meal post made from things that are on sale. If you are just buying sale items or if you are trying to learn to create a menu plan around the sale items, I thought that this might help get you started. Plus we all love recipes around here don’t we? 🙂 Let me know what your feedback on this post is! If you like it, I’d be more than happy to make it a weekly thing. If you like the idea but think it needs tweaking, let me know. These posts will assume you have a few basics on hand already but the main ingredients will be from this weeks sales.
What you need:
- Chicken Breasts (Don’s Valley Market 1.69lb)
- Chicken Broth
- Blueberries(Safeway 1.50)
- Brown Sugar
Combine cheese and mayo to make a thick little mixture. Place on top of chicken breasts. Depending on how many you want to make, place the chicken breasts in a 9×13 or 8×8 pan. Fill the pan halfway up the sides of the chicken breasts with broth.(How to make chicken broth)Bake at 400F for 45 minutes or until the chicken is no longer pink. For the blueberry crumble: Mix 2 packages of blueberries with sugar. (You can half this for less people) Place either in the crockpot or in an oven safe pan. Mix together a topping with 2/3 c. brown sugar, 2/3 c. oats, and 1/2 c. flour. Mix in 1/3 cold butter until crumbly. Add on top of blueberries. In an oven, bake at 375F for 30 minutes, or bake in the crockpot until bubbly.
Final cost: Will depend on how many pounds of chicken you need. Approximately 3.19 – 8.07 for a family of 2 – 6. Note: This meal is more expensive than many I would normally make because of the chicken breasts but I decided to post it because the chicken breasts are a good sale price this week if you do buy them.
