Simple Cheeseburger Casserole
Having a collection of versatile casserole dishes is a must for simple, everyday cooking. I enjoy a good casserole but often get tired of the same old, same old. That’s when I like to bring in this Cheeseburger Casserole for a delicious and nourishing hot meal for the family.
Not keen on the idea of ground beef at breakfast time? Not a problem, because this makes a fantastic dinner as well! Grab a pound of ground beef out of your freezer in the morning to have thawed and ready by dinner time. Ground pork or breakfast sausage may suit you for a brunch or breakfast dish as well.
This Cheeseburger Casserole consists of two delicious layers that cook together into the cheesy, juicy goodness of a cheeseburger. The first layer is browned hamburger in what I like to call a “special sauce”. While the ingredients of this sauce may seem lengthy, they’re quite simple staples you’ll find in your fridge or pantry! The top layer is what gives this casserole the breakfast/dinner versatility – fluffy eggs, spices, and lots of melty cheese. While baking in the oven, these two layers will cook together just enough to create the “stick” that a good casserole needs. Enjoy!
Ingredients for the Hamburger Layer:
- 1 lb. ground beef
- 1/2 yellow onion, diced
- 1/2 tsp. minced garlic
- 3 Tb. mayonnaise
- 3 Tb. ketchup
- 1 Tb. yellow mustard
- 1 tsp. worcestershire sauce
- 3 tsp. pickle juice
- sliced dill pickles
Ingredients for the Egg Layer:
- 6 large eggs
- 1/2 C. milk
- 1/2 tsp. dried parsley
- 1/2 tsp. hot sauce
- dash of salt and pepper
- dash of paprika
- 2 C. shredded cheese(s) of choice
Start by browning the ground beef and diced onion on your stovetop. Once the hamburger is cooked, I generally feel that the onion has cooked enough too. Add in minced garlic just before fully cooked. Drain if there is apparent grease.
Next, you will mix all of the condiments together to create that delicious special sauce. Grab a small bowl (a salad bowl works fine) and mix mayonnaise, ketchup, mustard, worcestershire sauce, and pickle juice until well blended. Pour into browned hamburger and onions, then mix.
Pour into a medium baking dish to create hamburger layer. I like to use a Pyrex 2 qt. glass baking dish. Top with sliced pickles.
Tip: I like to let my pickles sit on a paper towel atop a plate while cooking the first layer. This eliminates some of the juice and will help with the baking process.
For the egg and cheese layer, you’ll begin by cracking and whisking the eggs. Mix in milk, parsley, salt, pepper, and paprika. Also add hot sauce, if you wish. Pour over the hamburger and pickle layer, then top with shredded cheese. I used a mixture of cheddar and mozzarella.
Place baking dish in oven to bake at 375 F for 25-35 minutes. Cheese should be melted and bubbly, and eggs should be fluffy, but no longer jiggly. Let cool for at 10 minutes before serving.
What can I serve as a side with the Simple Cheeseburger Casserole?
For breakfast or brunch, I love serving this up with a side of biscuits and jelly. Hashbrowns are great too. If serving for dinner, think of what you might side with a cheeseburger – French fries, side salad, etc.
