Sometimes you just want easy things to make for supper, right? I recently published an article about Potato Dinner Recipes because I’ve been thinking about simple and frugal recipes that we can make in the winter.

This is a very easy recipe that you can make in the crockpot or just on the stove top so that you can warm up and fill up your family on cold winter nights. The comforting recipe uses just 4 ingredients and other ingredients to fit your tastes.

Ingredients in Potato Soup

  • Potatoes. My favorite potatoes for soup are yukon gold potatoes but if all you have are another variety, it will still turn out fine. Some varieties like russet potatoes might be a little more grainy.
  • Onions. This is our flavor booster in the basic recipe! You can add more flavors if you want to. (I recommend it!)
  • Milk. Whole milk is best, you could even add cream for a really luxurious version. Add a dairy free alternative like coconut milk for dairy free.
  • Flour. This is our thickener and we don’t need much. All purpose flour or all purpose gluten free flour is fine. If you have neither, use a starch like cornstarch or arrowroot.

Some things we like to add to this soup to give it additional flavor are:

  • Salt and Pepper (highly recommended!)
  • Bacon bits
  • Green Onion
  • Sour Cream
  • Chives
  • Butter
  • Shredded Cheddar Cheese
  • Herbs such as rosemary or thyme
  • Garlic Powder

Instructions to Make 4 Ingredient Potato Soup

Chop the potatoes and onions into small pieces.

In a medium saucepan on the stovetop, place the potatoes, onion, and all but 1/4 cup of the milk over a medium heat. Let the mixture simmer until the potatoes are soft or fork-tender.

Using an immersion blender, blend the soft potatoes and onions until the soup’s consistency is creamy. You can leave a few chunks in the soup if that is the texture you prefer or blend it all the way for a creamy texture.

If you do not have an immersion blender, you can mash up the potatoes using a potato masher. This won’t make a creamy potato soup but it will still taste good!

Mix the flour with the remaining milk and add into the simmering soup. Mix until the soup thickens.

Store any leftover soup in the fridge in an airtight container.

Gluten Free Potato Soup Recipe

This recipe is easily gluten free by using gluten free flour as the replacement for all purpose flour. You can also use a gluten free starch like tapioca starch in place of the flour. Flour will give the best results.

Dairy Free Potato Soup Recipe

Replace the milk in this recipe with a milk alternative for a dairy free version. You could also replace the milk completely with chicken broth or vegetable broth for a vegan soup.

    I always use arrowroot flour instead of flour for thickening, however I find potatoes have enough starch

  2. Try garnishing your bowl of potato soup with a little celery salt. It makes a wonderful difference, as will adding a little powdered chicken bouillon to the soup.
