Weekly Menu Plans – Camping Days

In an effort to have a little accountability in my menu plans, I’ve decided to post them here again. I don’t really do a lot of menu planning in the summer because it’s just mostly trying to keep up with whatever garden produce I have for the day, but in the fall/winter/spring I like to have a plan so that we can have a better school day.

This is our plan for a week that we are out camping for part of the week. I have the recipes linked for some but I haven’t posted all of them yet!

This plan is for our family of 5 who are all home every day since we mostly work from home. Since several of you asked last week, I decided to backtrack a couple of days to include all of the meals that we took camping.

**I do not plan side dishes, we make those from whatever fruits/veggies we have on hand that week.

Camping Menu

So normally when we go camping we take our camper with us. This particular camping trip we are heading to a dry cabin (electricity but no water). For this, I pack all of our food into our “7 Day Coolers” that we got from Costco and then there is also a mini-fridge at the cabin for our meat. For cooking, I take my large skillet and our griddle and a couple of utensils. As always, I don’t have our “side dishes” listed here and we don’t make desserts while camping but we do take plenty of marshmallows and apple cider. 🙂 All our lunches listed will be while we are out adventuring so they are all “on the go”.

Pancakes with Strawberries

Saturday

Breakfast – Banana Bread
Lunch – Pizza Muffins (basic muffins with added cheese and pepperoni)
Supper – Burgers

Sunday

Breakfast – Bacon and Eggs
Lunch – BLT Sandwiches (will use leftover bacon)
Supper – Sausage and Veggie Skillet (kielbasa, zucchini, & asparagus this time)

Monday

Breakfast – Pancakes (will take along my Pancake Mix)
Lunch – Stacked Crackers (crackers + various lunch meats and cheeses)
Supper – Balsalmic Steak Bites (will post the recipe soon)

Tuesday

Breakfast – Doughnuts (These are bought instead of homemade for a special treat!)
Lunch – Sandwiches
Supper – Freezer Food (We will be back home by this time. See my note on freezer food below.)

Regular Weekly Menu

Wednesday

Breakfast – Homemade Toaster Strudels
Lunch – Soup
Supper – Spaghetti and Meat Sauce

Thursday

Breakfast – Hashbrown Casserole
Lunch – Pigs in a Blanket
Supper – Pizza

Friday

Breakfast – Pumpkin Muffins
Lunch – Freezer Food
Supper – Sticky Orange Beef

Taco Dip 7 Layer

Saturday

Breakfast – Egg Sandwiches
Lunch – Fried Rice
Supper – Garlic Chicken (garlic mixed with honey and olive oil baked as a glaze over chicken breasts)

Sunday

Breakfast – Homemade Doughnuts
Lunch – 7 Layer Taco Dip
Supper – Lo Mein

***If you’ve made it this far I’m sure you are wondering what the “Freezer Foods” are on my meal plan…

Basically, my freezers are currently full and we need to eat out of them so on those days that I planned “Freezer Food” for lunch, I’ll head out to the freezer in the morning and pick out some things and make a meal out of it!***
