Strawberry Apple Pie Crepes

I love crepes and I also love ways to use up my eggs.(I've got 5 dozen in the fridge right now!) This recipe didn't use too many of my eggs up but if you make a larger batch it would work well.
What you need:
- 1 c. flour
- 2 eggs
- 1/2 c. milk
- 1/2 c. water
- 1/4 t. salt
- 2 T melted butter
Mix together the flour, eggs, salt, and melted butter.
Slowly add in the milk and water until you have a nice smooth mixture.
For the strawberry sauce I mix together about 1 c. strawberries(I used frozen and thawed) plus 4 oz cream cheese and a little bit of sugar. I put this in a blender and mix until...
It looks like this. It tastes like cheesecake!
Bake to the crepes. Pour a small amount of batter in a greased fry pan(Do not use stainless steel! No matter how much I greased up my stainless steel pan it still stuck.) Fry one one side until the crepe can be pried up and then flip to the other side and fry. They don't take very long to cook.
I filled mine with homemade
canned apple pie filling. Then I put the strawberry sauce on the top. We've eaten them just with the strawberry sauce before and they are so yummy!

Lets see you have made me very hungry——LOl. These look very good—I wish I lived closer I would love to buy fresh eggs. You are so smart and talented and frugal. I think we all could take some lessons from you. God Bless have a lovely evening.

I make these with Nutella…I love them.
You can also use seasonal fruit….strawberries with lil sugar and then whipped creeam on top..mmmmmmmmmm mmmm mmmm m good:)
