Turkey and Feta Quesadillas

This was our first 2 week challenge meal that I made last night. You could use chicken instead of turkey, turkey was just what I needed to use up!

Turkey and Feta Quesadillas for 2

Cooked Turkey or Chicken meat(freezer)

1 can of diced tomatoes(pantry)

2 tortillas(freezer)

Feta Cheese(I buy this in bulk and freeze it)

Mozzarella Cheese(freezer)

Sour cream for topping and we had a salad fresh from the garden on the side. To make the quesadillas simply put tortilla in a frying pan, add all ingredients and fry until cheese is melted. I warmed the turkey up slightly in the microwave first.
