Why does it seem so hard to find lunch in the summer? Seems like in the winter, leftovers abound. But in the summer we tend to eat very fresh foods and usually end up making just what we can eat in the evening so there isn’t anything leftover the next day! Here’s some lunch inspiration for you for the summer. Bookmark this post so you can come back to it when you need an idea!

Now along with these ideas you might also want some Healthy Snack Ideas. We have those too! Everything from Healthy Fruit Snacks to Fruit Juice Gelatin. Another great way to use both of these lists is to plan your monthly or weekly meal plans around them. (Why is it that breakfast, lunches, and snacks are the hardest parts of a meal plan to plan?)

There are so many more simple things I could keep going! I’m one of those people that will take the fastest, easiest thing I can find for lunch, no need to make anything special for me! So my real challenge is weekends when my husband is home and wants to have something other than his regular sandwich for lunch.

    Peanut butter crackers, or a platter of cheese, crackers, pickles, and some garlic sausage, ham, or salami.

    Hummus with veggies, pita chips, or crackers for dipping is good too. The hummus can be made ahead of time, and is better after it sits for awhile.

    Tuna salad sandwiches is also quick and easy, and don’t forget the old pb & j.
