Why does it seem so hard to find lunch in the summer? Seems like in the winter, leftovers abound. But in the summer we tend to eat very fresh foods and usually end up making just what we can eat in the evening so there isn’t anything leftover the next day!   2. Peanut butter crackers, or a platter of cheese, crackers, pickles, and some garlic sausage, ham, or salami.

    Hummus with veggies, pita chips, or crackers for dipping is good too. The hummus can be made ahead of time, and is better after it sits for awhile.

    Tuna salad sandwiches is also quick and easy, and don’t forget the old pb & j.
