Peach Cheesecake Cobbler

It’s fun to come up with simple dessert ideas that can be made with very few ingredients (and no overly packaged/boxed products!). This Easy Peach Cheesecake Cobbler might not be the prettiest dessert in the whole world, but it’s so good!

A few years ago, I had this recipe idea in my head that just sounded really yummy and I wasn’t going to be able to sleep until I tested it out. So here is what came out of my middle of the night cooking escapade. It reminds me of something that my grandma may have made.

Peach Cheesecake Cobbler

Ingredients

  • 1/2 cup melted butter
  • 3/4 cup flour
  • 1/4 cup + 1/4 cup sugar
  • 2 cups diced peaches I used home canned
  • 1/2 cup cottage cheese
  • 8 oz. cream cheese

Instructions

  1. Mix together the melted butter, flour, and 1/4 c. sugar.
  2. Grease the bottom of an 8x8 pan and pat 3/4 of this mixture on the bottom.
  3. Soften the cream cheese and add the cottage cheese and the rest of the sugar. Beat until smooth. (Or at least as smooth as a cottage cheese/cream cheese mixture can get! Pour this mixture over the top of the crust.
  4. Pour the peaches on top of the cheese mixture and then sprinkle what's left of the butter/flour/sugar crumbles on top.
  5. Bake at 350F for about 25-30 minutes or until bubbly. Let it cool off for a while before you serve.

Peach Cheesecake Cobbler

The crust is kind of a nice buttery shortcake. The cottage cheese adds a little lightness to the cream cheese filling and the peaches on top are there so you don’t feel 100% guilty about enjoying this dessert!

This recipe is a great way to use fresh, in-season peaches, but if you don’t have any, you can always use canned peaches as well. Either way, your dessert will turn out great!
