Poor Man’s Simple Garlic Sauce Recipe

Lately, I’ve been trying to come up with more creative ways to use the food items that I already have on hand. We still love to have tasty meals, even though we don’t need to them be over-complicated.

Something I always have in my freezer is homemade chicken broth. I usually make this on a weekly or every-other-week basis depending on the meals that we are making. Chicken broth is good for so many different things and when you are making bone broth, it’s so healthy for you as well!

A few weeks ago, I wanted to come up with a very basic Garlic Sauce that I could use to favorite meals with chicken or pasta dishes. We can’t do dairy in our household because of allergies (not for all of us anyway) and I’m personally not a big fan of the milk alternatives although I do use them when I’m making things just for the kids.

So I thought, what if I could come up with a way to make a tasty sauce using very few ingredients? It would be very budget-friendly but still add that extra boost of flavor and creaminess I was looking for.

This Simple Garlic Sauce recipe is what I came up with and I will admit…I LOVE it. It’s so ridiculously easy to make and adds so much flavor to our meals! Plus it’s so simple to make, using just 5 ingredients. I hope you like it and use it as much as we do right now!

Simple Garlic Sauce Recipe

What You Need:

  • 2 cups Chicken Broth
  • 1 1/2 teaspoons Salt
  • 4 Garlic cloves, chopped
  • 3 Tablespoons Olive Oil (another oil would work too)
  • Arrowroot powder (or another starch)

Chopped Garlic

Start by peeling and chopping your garlic. I have trouble with my hands when I peel my garlic so I recently discovered this handy Garlic Peeler and I can’t rave about this thing enough! It really does peel the garlic without having to get your hands smelling like garlic for the next 10 days and it makes quick work of it too.

Cooking Garlic

Once peeled, chop the garlic and place it into a small saucepan with about 1 tablespoon of oil.

Cook the garlic on the stove on a low/medium heat until fragrant, then add in the broth and the additional oil.

It’s going to look a little odd (especially if you burned the garlic a bit *cough cough*) but this weird oily concoction is just what you want. Let it cook until it comes to a simmer. Add in the salt.

Garlic Sauce in Blender

Once the mixture is simmering, remove it from the stove and place it into your blender. THE SAUCE WILL BE HOT. Blend it in a high powered blender (I have a Blendtec) for about 30 seconds. I cover the top with a cloth while I’m holding the lid on because the mixture will be very hot and it will splash. USE CAUTION.

Creamy Garlic Sauce

Pour the creamy mixture back into the saucepan and put it back on a low/medium heat to bring it to a simmer. Mix a small amount (about a teaspoon or less, we don’t want to make a thick gravy!) of arrowroot powder into a little water and then slowly stir it into the simmering sauce just to thicken it up a little bit.

That’s it! Now you have a yummy, creamy sauce that you can add to your meals or put over noodles. Since we make it with only tiny amounts of ingredients and chicken broth (which is technically a “leftover” anyways) this sauce costs very little to make, hence the name Poor Man’s Garlic Sauce!

I hope that you enjoy this cheap recipe as much as we do.

  1. So creative! Thank you… looking forward to trying this. Love that it is made with whole, simple ingredients.

  2. I found the garlic peeler at our local Dollar Tree store. A dollar for a package of two. They look exactly the same as the ones on Amazon. They work great.

  3. Why recipe 3 tablespoon oil when recipe used just one tablespoon? Of course I may have missed something.

  4. Can’t wait to try this! My daughter in law gave me several bulbs of garlic her mom grew. This would be great over zoodles or any veggie noodle, regular pasta, burgers, chicken, pork, really any meat. I’m getting hungry just thinking about making it!

  5. This looks amazing, but I noticed you’ve listed the cuisine as Italian? It looks similar to the garlic sauce that comes with schwarma…would you say it’s similar? And any idea how long it could be kept for…if you had leftovers, that is…

    Thank you!

    1. I haven’t had that dish so I couldn’t tell you for sure. This reminds me of a thin alfredo type sauce. I keep it for a few days in the fridge and we always use it up by then.
