We are getting ready to take a little trip and I am looking for quick, easy to pack-and-take foods. As I was thinking this through, I thought about my pizza roll ups and how I could change those to be a quicker, easier, go-to food. Something that could be made and froze and just take out individually to serve. Here is what I came up with!

Go ahead and make your favorite bread dough recipe. I use this one for Whole Wheat Dough or you can use this one for White Bread Dough.

To change it up this is what I did! I made the dough up and cut the dough into smaller, bun size portions.

I found these awesome bite-size pepperonis at the store, so this seemed perfect.

Roll each of the pieces out or just pat them out into a smaller circle size. This is what I did. Then add in a small amount of the pepperoni and a small amount of shredded mozzarella cheese.

Fold in the sides to encapsulate the goodies inside and press the seam shut.

Place, seam side down, in a muffin pan.

I baked these for approximately 15-20 minutes at 350 degress. You do not need to let them rise at all.

They came out of the oven a bit gooey...but thats ok. I just popped them out of the pan and let them cool awhile. Place several in a ziploc bag and freeze them. They are easy to take out just one or several. Warm them up to serve.


They were also excellent fresh from the oven!!
