How to Make Corn Muffins

You already know I love having mixes in my pantry! Muffin Mixes, Scone Mixes, Seasoning Mixes….everything and anything to make meals easier, cheaper, and less processed. Today I want to share with you another super simple mix that you can keep in your pantry to make a yummy side for a meal – Corn Muffin Mix!

This easy Corn Muffin Mix can be used to make Homemade Corn Muffins or Corn Pumpkin Muffins. You can make and print all of the recipes below.

Corn Muffin Mix

What You Need:

  • 2/3 cup All-Purpose Flour (or Gluten Free Flour)
  • 1/2 cup Cornmeal
  • 3 Tablespoons Sugar
  • 1 Tablespoon Baking Powder
  • 1/4 teaspoon Salt

–Want to Make Gluten Free Corn Muffins? You can use Gluten Free All Purpose Flour in this recipe in place of regular All-Purpose Flour.

In a bowl, mix together all the ingredients.

Place ingredients in a jar or an airtight container and save until ready to use.

Corn Muffin Mix

Ingredients

  • 2/3 cup All-Purpose Flour
  • 1/2 cup Cornmeal
  • 3 Tablespoons Sugar
  • 1 Tablespoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. In a bowl, mix together all the ingredients.
  2. Place ingredients in a jar or an air tight container and save until ready to use.

Recipe Notes

One jar will make one recipe of Corn Muffins. (Recipe to follow)

Corn Muffin Recipe

What You Need:

  • 1 jar Corn Muffin Mix
  • 2 Tablespoons Oil
  • 1 Egg
  • 1/3 cup Milk (or water for dairy free)

Mix all ingredients together in a large bowl. Grease or line a muffin tin and drop batter in the tin with a muffin scoop. Bake at 400 degrees for 15 to 20 minutes or until a toothpick inserted in the center of one of the muffins comes out clean.

Corn Pumpkin Muffins

Looking for another yummy recipe to use your Corn Muffin Mix with? Try this easy Pumpkin variation! It’s delicious and perfect for those with egg or dairy allergies. If you used gluten free flour above in your mix, you can even enjoy these as gluten free, dairy free, egg free corn muffins!

What You Need:

  • 1 jar Corn Muffin Mix
  • 1 15 ounce can (or about 2 cups) of Pumpkin Puree

Mix both ingredients together until no dry mix remains. Line or grease a muffin pan and drop the muffins in with a muffin scoop. Bake at 350 degrees for about 25 minutes or until a toothpick inserted in the center of one of the muffins comes out clean. Serve warm with butter and/or honey.

  2. These look really good, the plain ones would you eat those with butter and/or honey? Sorry being British we don’t use cornmeal as much as we should! I’d really like to give these a go though. Been meaning to make cornbread so have all the ingredients. Thanks for this

  3. Being just one person in hse how long would it last on the shelf ? Can u double the recipe & put it one jar ? If u can, how much would u use ? Thanks U. Love your site.

    1. This lasts at least 6 months on the shelf if kept in an air tight container. A double recipe wouldn’t fit in a single jar so I would recommend making 2 recipes and using separate jars for them.

  4. My favorite mixes that I simply love is the biscuit mix, pancake mix, pudding mixes I make choc and vanilla pudding mixes these are my go to mixes from them I can whip up desert and main dish in no time I love the corn muffins mix thanks for sharing

I could also picture making this mix and putting it in a beautiful jar with the recipe and giving it as a gift! Thank you! And corn muffin with pumpkin puree! Oh no! That sounds incredible.
