It’s 5:30 pm. You open the refrigerator and see the usual mishmash of baby carrots, half an onion, and a package of chicken.

Tip: For frozen chicken, don’t despair! Take it out of the packaging and microwave it on low for 5-10 minutes to thaw it quickly. Make sure to check after every 2 minutes.

For the warmer months, don’t be afraid to serve chicken cold! One of my husband’s favorite things is chicken salad. I use some shredded cooked chicken, mix in some mayo, salt, pepper, and sliced grapes. You can eat it on sliced homemade bread or as a salad on greens.
If sandwiches are your thing, try a CLT! Sub out the bacon in a BLT for some cooked chicken breast. It’s even better if you add a slice of avocado.
