It’s 5:30 pm. You open the refrigerator and see the usual mishmash of baby carrots, half an onion, and a package of chicken.
You call the pizza shop, right?
Wrong! As long as you have some chicken – thighs, breast, even a whole chicken — it doesn’t matter — you can have an easy and healthful meal on the table in under 45 minutes.
Tip: For frozen chicken, don’t despair! Take it out of the packaging and microwave it on low for 5-10 minutes to thaw it quickly. Make sure to check after every 2 minutes.
I buy most of our chicken in bulk from Zaycon Fresh. If you are looking for a great source for bulk chicken and other meats (for a great price!), I highly recommend that you check them out. See my review of Zaycon here and find the latest Zaycon Fresh coupons here.

If you’re planning ahead a bit, here are some delicious slow-cooker recipes:
For the warmer months, don’t be afraid to serve chicken cold! One of my husband’s favorite things is chicken salad. I use some shredded cooked chicken, mix in some mayo, salt, pepper, and sliced grapes. You can eat it on sliced homemade bread or as a salad on greens.
If sandwiches are your thing, try a CLT! Sub out the bacon in a BLT for some cooked chicken breast. It’s even better if you add a slice of avocado.
And of course for a very easy meal you can try Canning Chicken ahead of time. Then all you need to do to make a simple chicken noodle soup is heat, add noodles, and serve!
