Lemonade Poke Cake Recipe
Summer is almost over. But before it has ended, I wanted to make a refreshing, summery treat to share with my family. We are always getting together for BBQs and picnics. There’s always the traditional picnic foods like Old Fashioned Potato Salad, 7 Layer Taco Dip, Baked Beans. It might be nice to try something a little different this time. What better treat to bring than this refreshing and easy Lemonade Poke Cake?
I was not sure how this cake would turn out, but ask my family, and they will tell you how refreshing, moist, and delicious it is. Perfect for a summertime treat!
This recipe is super easy. You can always use a boxed cake mix if you are in a bind or you can make your own homemade version of yellow cake for the recipe. This Lemonade Poke Cake recipe would be a great reason to make your own homemade yellow cake mix and keep it on hand in the pantry! Lemonade Poke Cake Recipe
Ingredients
- 8x8 or 9x9 Yellow Cake pre-baked
- 6 oz can frozen lemonade concentrate thawed(or homemade)
- 3/4 cup powdered sugar
- white or lemon frosting optional
- natural sprinkles or colored sugar to decorate optional
Instructions

Prepare & bake the cake .

Let it cool for about 15 minutes.

Mix the lemonade concentrate with the powdered sugar.

With a long pronged fork, poke holes in the warm cake, spacing about 1/2 inch apart. Loosen the cake from the sides of the pan by running a knife around the edge.

Pour lemonade mixture over the cake evenly.

Refrigerate (covered) for about 2 hours.

Decorate with frosting & sprinkles as desired. (optional)

Keep stored in the refrigerator until serving.
Lemonade Cake Decorations and Toppings
If you need an additional frosting on this recipe our recipe for The Best Cream Cheese Frosting would work great here! Otherwise, a traditional Buttercream Frosting will do just perfectly. Use this recipe but don’t add the strawberries.
You also might want to use natural sprinkles or colored sugar to decorate just for fun!

So the pwd. sugar and lemonade concentrate mixture are not what I see in the photo of the cake? That’s a separate step, AND it has frosting over that?
The frosting over the top is optional. The picture shows the cake only with the lemonade and powdered sugar on the top. I will update the recipe to better reflect that.
I only have a a 6×6 baking pan. Will that work or need adjustments? Thank you.
I would use a pie plate over a 6×6 baking pan. If you’d like to use the 6×6, I would probably cut the recipe in half.
