Lemonade Poke Cake Recipe

Summer is almost over. But before it has ended, I wanted to make a refreshing, summery treat to share with my family. We are always getting together for BBQs and picnics. There’s always the traditional picnic foods like Old Fashioned Potato Salad, 7 Layer Taco Dip, Baked Beans. It might be nice to try something a little different this time. What better treat to bring than this refreshing and easy Lemonade Poke Cake?

I was not sure how this cake would turn out, but ask my family, and they will tell you how refreshing, moist, and delicious it is. Perfect for a summertime treat!

This recipe is super easy. You can always use a boxed cake mix if you are in a bind, or you can make your own homemade version of yellow cake for the recipe. This Lemonade Poke Cake recipe would be a great reason to make your own homemade yellow cake mix and keep it on hand in the pantry! Ingredients in Lemonade Cake Recipe

  • Yellow Cake Mix. As I mentioned above, you can make your own, buy one, or use a Yellow Cake that you’ve already made.
  • Frozen Lemonade Concentrate. Use your favorite kind from the store. If you make your own Lemonade Concentrate, that will work too!
  • Powdered Sugar. You can use this for the topping or the frosting since we are going to mix it with the lemonade concentrate. If you feel like this is enough sugar, you don’t need to add the frosting.
  • White or Lemon Frosting. If you don’t have frosting or don’t want to make any, use powdered sugar instead.
  • Sprinkles. These are optional and just for fun!

Step By Step Instructions for Making Lemonade Cake

Prepare & bake the cake. Let it cool for about 15 minutes. While the cake is cooling, mix the lemonade concentrate with the powdered sugar.

With a long pronged fork, poke holes in the warm cake, spacing about 1/2 inch apart. Loosen the cake from the sides of the pan by running a knife around the edge.

Pour the lemonade mixture over the cake evenly and then refrigerate (covered) for about 2 hours.

Decorate with frosting & sprinkles as desired. Keep stored in the refrigerator until serving.

I love this recipe. My kids always say it tastes like summer!

  • 6 ounces frozen lemonade concentrate thawed (or homemade)
  • 3/4 cup powdered sugar
  • frosting white or lemon – optional
  • sprinkles natural or colored sugar – optional

Lemonade Cake Decorations and Toppings

If you need an additional frosting on this recipe, our recipe for The Best Cream Cheese Frosting will work great here! Otherwise, a traditional Buttercream Frosting will do just perfectly. Use this recipe, but don’t add the strawberries.

You also might want to use natural sprinkles or colored sugar to decorate just for fun!

  14. So the pwd. sugar and lemonade concentrate mixture are not what I see in the photo of the cake? That’s a separate step, AND it has frosting over that?

    1. The frosting over the top is optional. The picture shows the cake only with the lemonade and powdered sugar on the top. I will update the recipe to better reflect that.
