Are you struggling right now with what to make for meals? Even though we have more time at home, it’s become more difficult to find the ingredients we need to make the things that we know and love.

So I thought that today was a good time for some new, very simple recipes that take very little time to prepare and very few ingredients to make. If you want to print these out, you can also grab the printable recipes at the bottom of this blog post.

And of course, this wouldn’t be Little House Living if these recipes contained boxed or canned ingredients from the store…so they don’t!

5 Ingredients or Less Breakfasts

Bananas and Oats Smoothie

  • 1/2 cup Oats
  • 1 Banana, frozen
  • 1 cup Milk

Blend all ingredients together and serve. Double to serve more than one person. You can use a regular banana instead of a frozen one but the frozen banana tastes better.

Pumpkin Pancakes

Banana Pancakes

  • 1 Banana
  • 2 Eggs
  • Cinnamon (add to taste)

Blend all ingredients in a blender. Pour 1/3 cup of the batter into a hot griddle and cook for a minute or two on each side until done. Serve with maple syrup or honey butter. You can also replace the banana with 1 cup pumpkin puree like I did in the picture above.

Salsa Eggs and Beef

  • 1 pound Ground Beef
  • 1 cup Salsa
  • 5-6 Eggs

Cook the ground beef in a skillet until no pink remains. Add in the salsa and cook together until heated through. Crack the eggs over the top and continue to cook until the eggs are cooked. You could also replace the ground beef with rice or hashbrowns for something even more frugal!

Quick French Toast

  • 2 Eggs
  • 1/2 Loaf Bread
  • 1/2 teaspoon Cinnamon
  • 1 1/2 cups Milk
  • 1 teaspoon Vanilla Extract

In a bowl, combine the eggs, milk, cinnamon, and vanilla. Whisk well so the eggs are beaten in. Dip each piece of bread in the mixture and fry in a hot griddle or frying pan (greased) for a minute or two on each side. Serve with maple syrup or whipped topping.

Breakfast Parfait

Layer the yogurt on the bottom of the cup, top with fresh berries and sprinkle with the granola.

5 Ingredients or Less Main Meals

Salsa Rice Dish

  • 4-5 cups Rice, cooked
  • 1 lb Ground Beef
  • 1 1/2 cups Salsa
  • Cheese, Sour Cream, Salt, Garlic Powder (optional)

In an extra-large frying pan, fry the ground beef until no longer pink. Add in the cooked rice and salsa and cook together until everything is heated through. Add salt or garlic powder for seasoning if desired. Serve topped with shredded cheese and/or sour cream.

Brown Sugar Chicken

  • 1/4 cup Brown Sugar
  • Garlic, fresh and chopped, 2 cloves
  • 2 tablespoons Olive Oil
  • 2 large Chicken Breasts

In a bowl, combine the olive oil, brown sugar, and garlic, you may need to add a little more olive oil if the mixture doesn’t come together. Put the chicken breasts in an 8×8 baking dish and pat the brown sugar mixture over the top of the chicken. Bake at 375 degrees for 25 minutes or until the chicken internal temp is at 165 degrees. This recipe can be doubled or tripled depending on how many you are serving.

Egg Drop Soup

Egg Drop Soup

  • 2 Eggs, beaten
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Onion Powder
  • 1/2 teaspoon Salt (or more)
  • 6-8 cups Chicken Broth
  • Green Onions (optional)

Heat the chicken broth and the spices on a warm stove. Once the broth is simmering, add in the beaten eggs very slowly, whisking briskly while you are adding them. Remove from heat, top with some green onions and serve.

Bean and Cheese Quesadillas

Spread the refried beans on a tortilla and place in a large frying pan or warm griddle. Sprinkle cheese over the top and then top with another tortilla. Let it cook on one side for a few minutes until the cheese melts and then flip. Evenly brown the tortilla on both sides before removing from heat. Serve with salsa or sour cream as a dipping sauce.

Shredded Chicken and Beans

  • 2 pounds Chicken, cooked and shredded
  • 2 cups Black Beans, cooked
  • 1 1/2 cups Salsa

Combine all ingredients together on the stovetop until warmed through. Serve on tortillas or over rice. You can also replace the chicken with shredded pork if that’s what you have on hand.

Peach Chicken

Peach BBQ Chicken

  • 1/2 cup Soy Sauce (add less if using store bought)
  • 1 fresh Peach, diced
  • 1/4 teaspoon Garlic Powder
  • 1/4 cup Maple Syrup

Combine all ingredients in a blender until smooth. Pour over chicken (I chose drumsticks in the picture above) and cook in a 375 degree oven until chicken internal temp is 165 degrees.

Ranch Chicken

Place all ingredients into a slow cooker and cook on low for 5-6 hours until chicken is cooked through with an internal temp of 165 degrees.

Sausage Skillet

Skillet Sausage Meal

  • 1 package Sausages, sliced into coins (12-16 ounces, your favorite kind)
  • 2 large Sweet Potatoes, diced
  • 2 cups frozen Spinach (can use fresh but will need to double the amount)

Start by frying the sausage and the sweet potatoes in the skillet with a little bit of oil. Add in the spinach last, once the sweet potatoes are soft and the sausage is cooked through.
