Gluten Free Banana Carrot Muffins
It seems like it’s been a while since I posted a new recipe so I thought I better get to it! These little muffins are easy to put together and they make a great tasty breakfast. They also freeze well so you can make a double batch and have extras for later.
Gluten Free Banana Carrot Muffins
Ingredients
- ½ cup butter softened
- ¾ cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 ½ cups old fashioned oats ground into oat flour
- ½ cup additional old-fashioned oats
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoon cinnamon
- ¼ cup milk
- 2 bananas mashed
- 2 carrots peeled and grated
Instructions

Preheat oven to 350ºF.

Using a blender or food processor, grind 2 1/2 cups of old fashioned oats into oat flour. You may need to do this in batches - I use a regular blender and do 1 cup at a time. You can also use 2 1/4 cups plus 2 Tbsp. pre-ground oat flour.

In large bowl, mix all ingredients except apple and carrots until combined. Fold in apple and carrots.

Scoop muffin batter into greased muffin pans, filling almost to the top of the pan. Bake for 20-22 minutes. Cool completely before removing muffins from pans.
How to Make Dairy Free Banana Carrot Muffins
These muffins are already gluten free naturally since they only use oats in the recipe and no regular flour but in order to make them dairy free, you will need to sub out the butter. Here are a few different things you can use instead:
- 1/2 cup Vegan Buttery Sticks, softened OR
- 1/2 cup Coconut Oil, softened OR
- 1 Extra Banana OR
- 1/2 cup Applesauce
You will also need to swap out the milk but to do this you just need to add your favorite dairy-free alternative in place of the regular milk. If you don’t have any alternatives on hand, you can always add water instead.
Extra Additions to the Banana Carrot Muffins
It’s fun to add some extras into these muffins! Since they tend to be a little more dense because of the oat flour, they can hide all kinds of yummy goodies well. Here are a few things you can add:
- 1/2 cup Blueberries
- 1/2 cup Applesauce (in place of one of the bananas)
- 1 Apple, grated
- Grated Parsnips in place of the grated carrot
How to Freeze Muffins
These Banana Carrot Muffins freeze well so you can always make a double batch and freeze the extras for later!
To freeze the muffins, let them cool completely after baking. Place them in a gallon-size freezer bag and freeze them on a shelf where they can freeze without getting smushed.
To thaw the frozen muffins, bring the muffins out to room temperature the night before you wish to enjoy them or place the frozen muffin in the microwave for a few seconds to thaw before enjoying.

Does your family enjoy muffins for breakfast?
I am out of oats and have bananas I need to use. Could I use flour in place of the oats? If so, how much flour?

How many muffins does this recipe make?
This recipe makes 12 regular sized muffins.
The recipe lists bananas, however instructions say to add apple that is not listed in ingredients.
I made these and they were delicious, but extremely crumbly. I completely crumbled them, dried them in the oven and eat like granola. Still delicious!
