Easy White Chicken Chili

This super easy White Chicken Chili recipe uses only pantry staples. You can make it in 30 minutes for a quick lunch or supper!

I found this super simple recipe for White Chicken Chili in my Granny’s recipe box and we now like to enjoy it about once a month. I love that it’s made with pantry ingredients that I always have and everyone loves it!
This recipe is so easy, it’s just mostly dump and go. My Granny probably made this in the crockpot, so you could too if you prefer!

Ingredients in White Chicken Chili
- Chicken. Use leftover shredded chicken, home-canned chicken, or other canned chicken.
- Great Northern Beans. I got these from Azure and used them here since I don’t have any home-canned white beans right now.
- Canned Green Chilis. I buy these at Costco and stock up for the year. They are the best price there.
- Chicken broth. Use home-canned chicken broth or store bought.
- Onion. I always keep fresh onions in the root cellar!
- Cumin, garlic powder, oregano, salt, and pepper. I buy all my bulk spices from Azure.

Step by Step Instructions for Making White Chicken Chili
Fry the onion in a saucepan or stockpot with some oil until translucent.

Add in all of other ingredients including the spices. Stir well.

Simmer for about 20 minutes to let the flavor develop.

Serve warm, topped with shredded cheese and sour cream.

This simple white chicken chili recipe can be made with just pantry staples.
Ingredients
- 1 large onion chopped
- 3 cups cooked chicken
- 4 cups chicken broth
- 1 can diced green chilis
- 2 15oz great northern beans canned, drained
- 1 teaspoon oregano
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- salt and pepper to taste
Instructions

Tips for Making White Chicken Chili
- Don’t have great northern beans? Use a different white bean like navy beans!
- To store leftover chili, place it in an airtight container and store in the fridge. You could also freeze it for later!

Made this tonight and it was a hit!
I used Great Northern beans instead of Cannellini, and 2 cans of chicken. A very easy and tasty meal. Thank you for this recipe, it’s a keeper!
Meant to say that I used cannellini beans, as that is what I had on hand. I also added 1/2 tsp of paprika and a half bag of frozen corn. The next day when I reheated the leftovers , I made it creamy by adding about a cup of plain yogurt at the end when it was warm. It was delicious!
