Every so once in a while we just need a little treat, don’t we? Lemon flavored anything isn’t really my cup of tea but my hubby loves the taste so I thought this week that I would make him a little treat.
This sweet little Lemon Poppyseed Bread Mix is tasty (according to him!) and is a fun little variation from the regular quick breads I like to make, such as some of my favorites Blueberry Zucchini Bread, Pumpkin Zucchini Bread, or Pumpkin Bread.

I’ve put this lemon bread recipe into a simple mix so that you can keep this delicious treat in your pantry and make it whenever you feel like it. Lemon Poppyseed Bread Mix Recipe
What You Need:
- 2 cups All-Purpose Flour (Or All-Purpose Gluten Free Flour)
- 2 tablespoons Poppyseeds
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Sugar
Mix all ingredients together in a medium-sized bowl and place the mix in a quart jar. Store in your pantry until ready to use.

Lemon Poppyseed Bread
When you are ready to make bread you need:
- 1 jar Lemon Poppyseed Bread Mix
- 3 Eggs
- 1/4 cup Vegetable Oil
- 1 cup plain whole Yogurt
- 1 teaspoon Vanilla Extract
- 3 Tablespoons Lemon Juice
Mix all of the ingredients together in a large bowl.
Pour into a greased loaf pan and bake at 350 degrees for about 30 minutes or until a toothpick inserted into the center of the loaf comes out clean. This is the loaf pan that I have. I only have the one but it should last forever!
You can also make a simple glaze for the top if you wish for a little extra sweetness. Just mix a bit of milk with powdered sugar until it becomes the thickness you are looking for. For a lemon-flavored glaze use lemon juice instead of milk. Or just top with butter…butter is always good!

Can I substitue the all purpose flour with whole wheat flour.How much would I have to use to get the same results?
I have not made that substitute in this recipe but you could always try. You would use the same amount as white flour.
Hello! Love your recipe. 🙂 I was wondering… Instead of adding in yogurt, could the oil be increased or could milk be substituted? We almost never have yogurt on hand, as it goes bad before we get to it more often than not, and I’d love to be able to have a mix to have on hand whenever I get muffin cravings!
Do you happen to have sour cream on hand? That would be an easy substitute that would work very well.
