Lemon Poppyseed Bread Mix Recipe
Every so once in a while we just need a little treat don’t we? Lemon flavored anything isn’t really my cup of tea but my hubby loves the taste so I thought this week that I would make him a little treat. This sweet little Lemon Poppyseed Quick Bread is tasty (according to him!) and is a fun little variation from the regular quick breads I like to make like Blueberry Zucchini Bread, Pumpkin Zucchini Bread, or Pumpkin Bread.
So are you ready for another yummy recipe to add to your collection? I’ve put this recipe into a simple mix so that you can keep this yummy treat in your pantry and make whenever you feel like it. If you’d rather not make the mix, just follow all of the instructions below and bake now. Here we go!
Lemon Poppyseed Bread Mix
What You Need:
- 2 cups All Purpose Flour
- 2 tablespoons Poppyseeds
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Sugar
Mix all ingredients together in a medium sized bowl and place the mix in a quart jar. Store in your pantry until ready to use.
When you are ready to make bread you need:
- 1 jar Lemon Poppyseed Bread Mix
- 3 Eggs
- 1/4 cup Vegetable Oil
- 1 cup plain whole Yogurt
- 1 teaspoon Vanilla Extract
- 3 Tablespoons Lemon Juice
Mix all of the ingredients together in a large bowl.
Pour into a greased loaf pan and bake at 350 degrees for about 30 minutes or until a toothpick inserted into the center of the loaf comes out clean.
You can also make a simple glaze for the top if you wish for a little extra sweetness. Just mix a bit of milk with powdered sugar until it becomes the thickness you are looking for. For a lemon flavored glaze use lemon juice instead of milk. Or just top with butter…butter is always good!
